Mushroom & Spinach Frittata

This is my weekend lunch. It’s what I made while Elliot was laying in a sunny patch on the floor and I was in between episodes of True Blood. It’s extra lunch-y with a salad on the side. I’m a big fan of putting black beans in my salads, do you guys do that? You probably should. Oh, and spinach and mushrooms are best friends. It’s just the truth. So let’s have lunch. I’ll bring…

Crumby Blueberry Peach Galettes for Two

Jake makes dinner most nights during the week. Mondays are my night. Generally, on my night, I’d rather nap and then go out for pizza. I’d rather sit in a tall booth with Third Eye Blind playing. This last week I felt super motivated somehow! I made Tracy’s Vietnamese Noodle Salad (but with peanut-crusted chicken instead of tofu). I went to the grocery store on my lunch break and then again after work because I’m a…

Custard & Co. {date night}

Our apartment is a major hottie. And not in the “good-looking” way, but rather in the “too hot to make a salad” way. So we opted to go out for dinner (again), and follow it up with frozen custard. I’m a waffle cone kind of girl. Jake’s a rainbow sprinkle kind of guy. We talked about tattoos and shorts. I totally recommend you try this place. The chocolate custard reminds me of French Silk pie, and…

Rocket Pesto

I’m not into math, unless it’s food-math. In this case, all of those guys up there turn into that lovely green pesto down there! It makes the summeriest, greenest, dreamiest concoction. I stirred it into pasta, piled it on the plate down there, sprinkled it with mushrooms, and ate it picnic-style in the only air conditioned room in the house. Come over! Have some! I bet you’ll love it. I just don’t know why I’ve…

Strawberry Shortcake Sushi + Strawberry Coulis

Sometimes all I want to talk about is ice cream and puppies. Sometimes all I think about is dessert, and sometimes I fall in love with a blog (like sprinklebakes) and can’t stop thinking about techniques. Next thing you know, I’m making strawberry shortcake sushi. It’s my brother’s birthday. And since my mom’s in town he wanted us to make brunch (I mean lunch) for him. My mom made sandwich-rolls aka rearranged cheeseburgers and potato…

Speedy and Rustic Whole Wheat Tortillas

These are speedy because they took about 30 minutes start to finish; they are rustic because I’m incapable of rolling dough into a perfect circle and I’m much better at rustic shapes that resemble VW beetles. Some of the other tortillas were shaped like monsters, clouds and spongebob squarepants. Jake cooked up some panko crusted chicken and made a delicious salad for inside these guys. The salad was: cucumbers, grape tomatoes, dill, oregano, goat cheese…

Lunchbox Quiche: Baby Spinache + Sun Dried Tomatoes + Goat Cheese

I often worry about my next meal. At night, I get nervous if my cereal box is getting low. I sit at work trying to think of what I can make for dinner, and I hope-hope I have something good to make. So, with that said, I took care of a few lunches in advance today. These guys are so cute! They are like quiche-cupcakes. And they are perfect sandwich substitutes for your lunch. Put…

Texas Flour Tortillas

Sometimes you have to splurge. You need to get those boots for autumn’s sake. You really should get the $8 drink at happy hour, and you most definitely should get $10 cheese if you plan on making these homemade flour tortillas to be filled with a salad* for your lunch. Jake made the best salad. He’s the savory to my sweet. Make a breakfast burrito! Make a salad wrap! Make fajitas! Make up a reason!…
